Tropical Banana Bread with Honey

  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cut pineapple puree
  • ¾ cup local organic honey
  • 2 eggs, beaten
  • 3 mashed over ripe bananas
  1. Preheat the oven to 350 degrees
  2. Lightly grease 5 small muffin tins with coconut oil
  3. Combine flour, baking soda and salt in a large bowl.
  4. In a separate bowl, combine pineapple puree and honey. Once mixed thoroughly add the beaten eggs and mashed bananas.
  5. Pour the fruit mixture into flour mixture. Stir until moisten. *Be careful not to over stir once moisten
  6. Pour battered into prepared muffin tins.
  7. Bake in preheated oven for 40 minutes or until you can insert a toothpick and it comes out clean.
  8. Let bread come to room temperature before serving.
