Wednesday Night Supper- February 2012

Two weeks ago I shared with you that I cook supper at our church once a month on Wednesday nights.  You can view that post here.   Our task is to feed anywhere from 60-80 people and our budget is $2-$2.50 per person. We are also  feeding a range of ages so sticking to familiar or home style foods is best. We prepared our most recent meal on Wednesday February 8th, it was by far our CHEAPEST night yet!  We spent $93.50 for the entire meal!  We fed approximately 70 people.  That is $1.34 per person!!!!  WHOO HOO!

We do all of our shopping at Wal-Mart and buy store brand as often as it is available.  This helps us to curb our costs and stick to our budget. Our menu was Tater Tot Casserole, Creamy Chicken and Rice Casserole, Green Beans, Garlic Bread and Fruit.

Creamy Chicken Rice Casserole serves 35

Ingredients

3 Rotisserie Chickens, deboned
6 cups milk
6 cups uncooked white rice

6 (10.75 ounce) cans condensed cream of chicken soup

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl combine the milk, rice, soup and seasoned salt if desired. Mix well. Pour mixture into a lightly greased 9×13 inch baking dish. Add the chicken pieces.
3. Cover dish tightly with aluminum foil and bake in the preheated oven for approximately 3.5 hours or until rice is done, stirring every 45 minutes. Uncover the dish and bake for another 30 minutes to allow the rice to brown.

Tater Tot Casserole serves 35

Ingredients

3 pounds ground beef

3 onions, chopped

salt and pepper to taste

2 (32 ounce) package tater tots

3 (10.75 ounce) can condensed cream of mushroom soup

1.5 cups milk

4  cups shredded Cheddar cheese

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large skillet over medium-high heat, brown the ground beef with the onions. Drain excess fat, and season with salt and pepper to taste.
  3. Spread the beef mixture evenly over the bottom of a casserole dish. Arrange tater tots evenly over beef layer. In a small bowl, stir the soup into the milk until smooth; pour over tater tot and beef layers. Sprinkle Cheddar cheese evenly over the top.
  4. Bake in preheated oven for 2 hours, until cheese is bubbly and slightly brown.

Shopping List for Meal:

3 rotisserie chickens

6 cups of milk

6 cups of uncooked white rice

6 cans of cream of chicken soup

3 tsp of seasoned salt

3 lbs of ground beef

3 chopped onions

2 32 oz pkg tater tots

3 cans of cream of mushroom

1.5 cup of milk

4.5 cups of shredded cheddar cheese

3 Large Can of Green Beans (found on the bulk food section)

4 loaves of French bread

3 small containers of garlic spread

Bag of apples

Large bag of red grapes

 

It was a very easy meal to prepare! We spent more time waiting on the casseroles to cook than we did preparing the meals!
