Simple White Cake
  • 1 cup white sugar
  • 1½ cups all-purpose flour
  • ½ cup butter
  • 1¾ tsps baking powder
  • 2 eggs
  • ½ cup milk
  • 2 tsps vanilla extract
  1. Preheat oven to 350○ F. Grease and flour 9x9 inch pan or line muffin pan with liners.
  2. In a medium bowl, cream together sugar and butter. Beat in eggs, one at a time, then stir in vanilla. Combine flour and baking powder, add to creamed mixture and mix well. Finally, stir in milk till batter is smooth. Pour or spoon batter into prepared pan.
  3. Bake for 30 to 40 minutes in preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to touch.
  4. (Tips: I used margarine instead of butter, which turned out fine to me. And, if you have self-rising flour, just omit the baking powder.)
